Method
Preparation
- Preheat the oven to 350 degrees F. Line a cupcake pan with baking cups.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat together the butter and brown sugar until creamy, about 2 minutes.
- Add the eggs one at a time, beating well after each addition. Then, add vanilla, sour cream, and vegetable oil.
- Gradually mix in the flour mixture alternating with milk, mixing until smooth.
Baking
- Fill baking cups about 3/4 full and bake for 15 minutes. Remove and cool to room temperature.
Frosting
- For the frosting, beat butter until creamy, then gradually add confectioners sugar, followed by dulce de leche and salt. Adjust consistency with milk or more sugar as needed.
Assembly
- Core the center of the cooled cupcakes and fill with dulce de leche, then frost the cupcakes, and garnish if desired.
Notes
Make sure all your ingredients are at room temperature for better mixing. For an extra caramel flavor, consider drizzling additional dulce de leche on top. Test cupcakes for doneness by inserting a toothpick—if it comes out clean, they’re done!
