  • 2 pounds Chicken (sliced into cubes)
  • 1 TBSP Cornstarch (for tenderizing)
  • 1 TBSP Vegetable Oil (for marinating)
For the sauce
  • 3/4 cup Soy Sauce (low-sodium recommended)
  • 3/4 cup Sugar (to balance flavors)
  • 1/2 cup Garlic (crushed)
  • 1/4 cup Green Onion (chopped)
  • 1 TBSP Sesame Oil
  • 1 tsp Red Chili Flakes (adjust to taste)
  • 1/2 tsp White Pepper (or black pepper)
For coating chicken
  • 1 1/2 cups Flour (for coating)
  • 1/2 cup Cornstarch (for crispiness)
  • 1/2 tsp Salt (for seasoning)

Method
 

Preparation
  1. In a large bowl, mix the cubed chicken with 1 tablespoon of cornstarch and 1 tablespoon of vegetable oil. Let it marinate for about 30 minutes.
  2. In another bowl, combine the soy sauce, sugar, crushed garlic, chopped green onion, sesame oil, red chili flakes, and white pepper. Stir well until the sugar dissolves.
  3. After marinating, pour the soy sauce mixture over the chicken. Ensure all pieces are well coated. Let it sit for another 30 minutes to absorb the flavors.
  4. In a separate bowl, mix the flour, cornstarch, and salt together.
Cooking
  1. Heat oil in a deep pan or fryer over medium heat.
  2. Dredge each piece of marinated chicken in the flour mixture, shaking off any excess.
  3. Carefully place the chicken in the hot oil. Fry until golden brown and crispy, usually around 5-7 minutes.
  4. Once cooked, remove the chicken and place it on a paper towel to absorb excess oil.

Notes

Serve the fried garlic chicken hot, garnished with extra chopped green onions. It pairs well with steamed rice or a fresh salad. A side of tropical fruit like pineapple can add a refreshing touch. To store leftovers, let the chicken cool completely before placing it in an airtight container. Keep it in the refrigerator for up to three days.
