Ingredients
  

Lima Beans

  • 2 cups dried lima beans soaked overnight
  • 4 cups water for boiling
  • 1 tsp salt to taste
  • 1 tbsp olive oil for added flavor
  • 2 cloves garlic minced
  • 1 bay leaf optional
  • 1/2 tsp black pepper

Instructions
 

  • Rinse the soaked lima beans thoroughly under cold water.
  • In a large pot, bring 4 cups of water to a boil.
  • Add the lima beans, salt, garlic, and bay leaf to the pot. Reduce heat and let it simmer for 25-30 minutes until the beans are tender.
  • Drain the beans and remove the bay leaf. Drizzle with olive oil and season with black pepper before serving.

Notes

For a richer flavor, cook the beans in vegetable or chicken broth instead of water. You can also add fresh herbs like rosemary or thyme for extra aroma.
