Lima beans, also known as butter beans, are packed with nutrients and can be prepared in various ways. This recipe brings out their creamy texture and mild flavor, making it a great addition to any meal.
Rinse the soaked lima beans thoroughly under cold water.
In a large pot, bring 4 cups of water to a boil.
Add the lima beans, salt, garlic, and bay leaf to the pot. Reduce heat and let it simmer for 25-30 minutes until the beans are tender.
Drain the beans and remove the bay leaf. Drizzle with olive oil and season with black pepper before serving.
Notes
For a richer flavor, cook the beans in vegetable or chicken broth instead of water. You can also add fresh herbs like rosemary or thyme for extra aroma.
