  • 2 medium Tomatoes Ripe and fresh for the best taste.
  • 1/2 medium Red Onion Thinly sliced.
  • 2 tablespoons Olive Oil Extra virgin for rich flavor.
  • 1 tablespoon Lemon Juice Freshly squeezed preferred.

  • 1/4 cup Fresh Basil Chopped, for garnish.

Method
 

Preparation
  1. Chop the cucumbers and tomatoes into bite-sized pieces.
  2. Slice the red onion thinly.
  3. In a large bowl, combine the cucumbers, tomatoes, and red onion.
  4. Drizzle with olive oil and lemon juice.
  5. Season with salt and pepper to taste.
  6. Toss gently to mix.
  7. Garnish with fresh basil before serving.

Notes

Cucumber Tomato Salad can be served chilled or at room temperature. Pairs well with grilled meats and fish. Store in the refrigerator for up to 2 days. Keep dressing separate if storing longer for freshness. For added flavor, let the salad sit for 10 minutes before serving.
