Dressing Ingredients
  • 1/4 cup olive oil Add more for richness if desired.
  • 2 tablespoons lemon juice Add more for tang if desired.
  • Salt and pepper to taste

Preparation
  1. In a large bowl, combine diced cucumbers, crumbled feta cheese, chopped red onion, and parsley.
  2. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the cucumber mixture and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Notes

Cucumber Feta Salad is best served cold as a starter or side dish. Garnish with extra parsley for a fresh look. Store in an airtight container in the refrigerator for 2-3 days. For a heartier option, add cooked quinoa or chickpeas.
