Preparation
  1. Start by washing the cucumber and thoroughly drying it.
  2. Chop it into bite-sized pieces.
  3. Chop the fresh pineapple into chunks.
  4. In a large mixing bowl, combine the chopped cucumber, pineapple, and halved cherry tomatoes.
  5. Add the finely chopped red onion and fresh mint.
  6. Drizzle the lime juice on top, and sprinkle with salt and pepper.
  7. Gently toss everything together until well combined.
  8. Let the salad sit in the fridge for about 15-30 minutes before serving.
