Pecan Pie Filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper and set aside.
  3. In a large mixing bowl, cream together the softened butter, oil, granulated sugar, and powdered sugar until fluffy.
  4. Add the room temperature egg and vanilla extract, and beat until combined.
  5. Add the flour, salt, and baking powder. Mix until just combined.
  6. Using a large cookie scoop, scoop out 9 equally sized cookie balls onto the prepared baking sheet and gently flatten them to about 1-inch thickness.
  7. Press down the center of each cookie, creating a well for the filling.
Baking
  1. Bake cookies for 8-9 minutes until edges are golden and centers are set.
  2. Allow cookies to cool on the baking sheet.
Filling Preparation
  1. In a saucepan over medium heat, melt the 5 tbsp of butter.
  2. Add brown sugar, chopped pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and a pinch of salt. Stir until glossy and bubbly, then remove from heat.
  3. Once cookies are slightly cooled, spoon the pecan filling into the wells of each cookie.
