  • 2 tablespoons honey Helps the sauce caramelize beautifully.

  • 1 tablespoon grated ginger Adds warmth and spice.
  • 1 tablespoon cornstarch Thickens the sauce.
  • 1/4 cup water To dissolve the cornstarch.

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. In a bowl, mix the orange juice, soy sauce, honey, garlic, and ginger until smooth.
  3. Pour this mixture over the chicken in the crockpot.
Cooking
  1. Cook on low for 6-8 hours or on high for 3-4 hours.
  2. Shred the chicken with two forks after cooking if desired.
  3. Mix cornstarch with water in a small bowl to create a slurry.
  4. Stir the slurry into the crockpot and cook on high for another 30 minutes.
  5. Return the shredded chicken to the pot, season with salt and pepper, and mix well.
Serving
  1. Serve warm, garnished with green onions.

Notes

For extra flavor, sear the chicken breasts before adding to the crockpot. You can add red pepper flakes for heat or include vegetables in the last hour of cooking.
