Ingredients
  

For the Soup Base
  • 1 lb ground beef or Italian sausage You can use either ground beef or Italian sausage.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups chicken or vegetable broth Use vegetable broth for a vegetarian version.
  • 2 cups pasta (such as macaroni or lasagna noodles) You can use any pasta shape.
  • 1 can ricotta cheese (15 oz)
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. In a skillet, brown the ground beef or sausage over medium heat. Drain excess fat.
  2. In the crockpot, combine the browned meat, chopped onion, garlic, crushed tomatoes, broth, pasta, Italian seasoning, salt, and pepper.
Cooking
  1. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  2. About 30 minutes before serving, stir in the ricotta cheese and half of the mozzarella cheese.

Notes

This soup can be topped with extra mozzarella cheese and fresh basil. Pair it with garlic bread or a fresh salad for a complete meal. For a healthier twist, use lean ground turkey or chicken.
