Method
 

Preparation
  1. Rinse and soak the beans overnight, then drain and set aside.
Cooking
  1. In your crockpot, combine soaked beans, ham hock or diced ham, onion, carrots, celery, chicken broth, garlic, thyme, bay leaf, and a sprinkle of salt and pepper.
  2. Cover and cook on low for 8 hours or high for 4 hours.
  3. When the beans are tender, carefully remove the ham hock, let it cool, shred the meat, and return to the pot.
  4. Give it a hearty stir before serving.

Notes

Soak beans to help them cook evenly, taste and adjust seasoning before serving, and feel free to add greens. Keep the lid on during cooking to maintain heat and flavor.
