Ingredients
  

Main Ingredients
  • 1.5 pounds boneless chicken thighs or breasts
  • 1.5 pounds baby potatoes halved if large
  • 4 cloves garlic minced
  • 1 cup grated parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 2 tbsp butter cut into pats
  • salt and pepper to taste

Method
 

  1. Wash and halve potatoes if needed. Mince garlic if not pre-minced.
  2. Place chicken in the bottom of the slow cooker. Add potatoes and garlic. Pour in chicken broth and heavy cream.
  3. Sprinkle in Italian seasoning, salt, and pepper. Add grated parmesan cheese and place pats of butter on top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and potatoes are tender.
  5. Stir gently before serving. Top with extra cheese if desired. Serve warm.

Notes

Use freshly grated parmesan for best flavor. Chicken thighs are juicier than breasts. Add greens in the last 30 minutes for variation. Freeze leftovers up to 3 months.
