  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the black beans, corn, diced tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper.
  3. Stir to combine all ingredients.

  2. Before serving, shred the chicken using two forks.

Notes

If you have leftovers, let it cool to room temperature before transferring to an airtight container. Store in the refrigerator for up to 3 days or freeze for up to 3 months. For an extra kick, consider adding a few slices of jalapeƱo or some hot sauce. You can also use rotisserie chicken for a quicker option.
