  • 1 pound boneless, skinless chicken breasts Fresh or frozen
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated Plus more for serving
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh basil Optional

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
Cooking
  1. Cook on low for 6-8 hours or high for 4-6 hours, until the chicken is tender.
  2. Remove the chicken, shred it, and return it to the crockpot.
  3. Stir in the heavy cream and Parmesan cheese, cooking for an additional 15-30 minutes until heated through.
Serving
  1. Serve hot in bowls, garnished with fresh basil and extra Parmesan cheese if desired.

Notes

For a thicker soup, you can add cornstarch mixed with water during the last cooking phase. Feel free to add more vegetables like spinach or zucchini for added nutrition. Adjust the seasoning to your taste, adding more Italian herbs if you love strong flavors.
