Main Ingredients
  • 1.5 lbs beef sirloin or flank steak thinly sliced against the grain
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced
  • 3 cloves garlic minced
Sauce
  • 1/2 cup low-sodium soy sauce
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional, for heat
Slurry
  • 2 tbsp cornstarch
  • 2 tbsp water

Method
 

  1. Thinly slice the steak against the grain. Slice the bell peppers and onion.
  2. Place steak, bell peppers, and onion into the Crock Pot.
  3. In a bowl, whisk together soy sauce, beef broth, brown sugar, garlic, ginger, black pepper, and red pepper flakes. Pour over the beef and vegetables.
  4. Cover and cook on low for 6 hours (or high for 3-4 hours) until steak is tender.
  5. 30 minutes before serving, mix cornstarch and water, then stir into the Crock Pot. Let it thicken with the lid off.

Notes

Serve over rice or noodles. Store leftovers in an airtight container for up to 4 days or freeze up to 3 months. Add sesame oil at the end for extra flavor.
