  • 1 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth

  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper Adjust for taste.
  • 1 cup freshly grated Parmesan cheese Add in last 15 minutes of cooking.
  • Fresh basil leaves for garnish

Preparation
  1. Season the chicken thighs with salt and black pepper.
  2. Place the seasoned chicken at the bottom of the crock pot.
Sauce Preparation
  1. In a bowl, combine chicken broth, heavy cream, minced garlic, Italian seasoning, and chopped sun-dried tomatoes. Stir well to mix.
Cooking
  1. Pour the sauce mixture over the chicken in the crock pot.
  2. Cover and set the crock pot to low for 4-6 hours or high for 2-3 hours until the chicken is cooked through and tender.
  3. Ensure the chicken reaches an internal temperature of 165°F (74°C).
  4. In the last 15 minutes of cooking, stir in the grated Parmesan cheese and allow it to melt into the sauce.
  5. Once cooked, give the sauce a good stir and garnish with freshly chopped basil leaves before serving.
