  • 1 cup sundried tomatoes, chopped

  • 1 cup chicken broth
  • 1/2 cup parmesan cheese, grated Consider using nutritional yeast for a dairy-free version.
  • 2 cloves garlic, minced
  • Salt and pepper, to taste Season chicken before adding sauce.
  • Fresh basil, for garnish Adds color and flavor.

Preparation
  1. Place the chicken breasts in the crock pot.
  2. In a bowl, mix together the sundried tomatoes, heavy cream, chicken broth, parmesan cheese, minced garlic, salt, and pepper.
  3. Pour the mixture over the chicken in the crock pot.
Cooking
  1. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
Serving
  1. Serve with pasta, rice, or mashed potatoes, and garnish with fresh basil.

Notes

If you have leftovers, let the chicken cool, then store it in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. When ready to eat, thaw overnight and reheat.
