Ingredients
  

For the crust
  • 36 pieces frozen tater tots
For the filling
  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (Mexican blend, cheddar, or white cheddar)
  • 4 slices bacon cooked and chopped
  • 1 teaspoon hot sauce
  • 1/2 teaspoon Everything but the Bagel seasoning or seasoning of choice

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Grease a muffin tin.
  2. Place the frozen tater tots in a food processor and pulse until finely chopped.
  3. Press the chopped tater tots into the bottom and sides of each muffin cup to form a crust.
  4. Bake for 20 minutes or until golden brown.
Cooking
  1. While the tater tots are baking, cook the bacon until crispy and chop it into small pieces.
  2. In a mixing bowl, whisk together the eggs, cottage cheese, hot sauce, and desired seasoning.
  3. Stir in the cooked bacon and shredded cheese.
  4. Once the tater tots are ready, pour the egg mixture into each cup.
  5. Return to the oven and bake for an additional 15-20 minutes, or until the egg is set.
  6. Allow to cool slightly before removing from the muffin tin and serve warm.

Notes

Press the tater tots firmly into the muffin tin to create a sturdy crust. Feel free to experiment with different meats, add veggies, or customize cheese and seasonings.
