Preparation
- Preheat the oven to 400°F (200°C). Grease a muffin tin.
- Place the frozen tater tots in a food processor and pulse until finely chopped.
- Press the chopped tater tots into the bottom and sides of each muffin cup to form a crust.
- Bake for 20 minutes or until golden brown.
Cooking
- While the tater tots are baking, cook the bacon until crispy and chop it into small pieces.
- In a mixing bowl, whisk together the eggs, cottage cheese, hot sauce, and desired seasoning.
- Stir in the cooked bacon and shredded cheese.
- Once the tater tots are ready, pour the egg mixture into each cup.
- Return to the oven and bake for an additional 15-20 minutes, or until the egg is set.
- Allow to cool slightly before removing from the muffin tin and serve warm.
Notes
Press the tater tots firmly into the muffin tin to create a sturdy crust. Feel free to experiment with different meats, add veggies, or customize cheese and seasonings.
