Preparation
- Preheat your oven to 425°F (220°C).
- Bring a pot of salted water to a gentle boil. Add your carrot rounds and cook for about 10-12 minutes until they’re fork-tender but not mushy.
- Drains the carrots and let them cool for a few minutes.
- Place the carrot rounds on your prepared baking sheet. Use the bottom of a glass or measuring cup to gently flatten them.
- Drizzle your olive oil over the smashed carrots and swirl them to coat evenly. Sprinkle on the garlic powder, smoked paprika, salt, and pepper, and top with Parmesan cheese.
Cooking
- Roast in the oven for 20-25 minutes, flipping halfway through, until crispy and golden.
- Remove from the oven and sprinkle with fresh parsley. Serve hot.
Notes
For the best results, don't overcrowd the baking sheet, and serve immediately for maximum crispiness. You can experiment with different spices for unique flavors.
