Preparation
- Peel the potatoes and slice them into sticks, about ¼ inch thick.
- In a pot of salted water, boil the potato sticks for about 5 minutes until slightly tender. Drain and let cool.
- Set up a breading station with three bowls: one for flour, one for beaten eggs with salt and pepper, and one for breadcrumbs.
Breading and Frying
- Dredge each potato stick in flour, dip it in egg, and roll it in breadcrumbs.
- Heat enough oil in a frying pan to cover the bottom, over medium heat.
- Carefully add the potato sticks to the oil and fry for about 3-4 minutes per side until golden brown.
- Drain on paper towels to soak up excess oil and sprinkle with salt and pepper.
Serving
- Serve hot with your choice of dipping sauces like ranch, marinara, or spicy aioli.
Notes
For best results, fry in batches to maintain oil temperature. You can parboil and cut potatoes a day ahead. These sticks are also freezable before frying.
