Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes under running water to remove dirt.
  3. Dry each potato with a towel.
  4. Poke holes all over the potatoes with a fork.
  5. Rub each potato with olive oil, then sprinkle generously with salt and pepper.
Cooking
  1. Place the potatoes directly on the oven rack and bake for 45-60 minutes.
  2. Check that they're done when easily pierced with a fork and aromatic.
