Ingredients
  

For the potato cheese mixture
  • 4 medium medium-sized potatoes Peeled and grated
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to use your favorite cheese
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional) For added flavor
For frying
  • Oil for frying
  • Fresh herbs for garnish (optional) Such as parsley or chives

Method
 

Preparation
  1. Peel and wash the potatoes. Grate them using a box grater or food processor.
  2. Place the grated potatoes in a clean kitchen towel and squeeze to remove excess moisture.
  3. In a large mixing bowl, combine the grated potatoes, shredded cheese, flour, egg, salt, pepper, and paprika. Stir until well combined.
  4. Take a handful of the mixture and form it into a stick shape. Repeat with the remaining mixture.
Frying
  1. In a deep skillet, heat oil over medium-high heat.
  2. Fry the potato cheese sticks in batches for 3-4 minutes until golden brown and crispy, flipping halfway through.
  3. Use a slotted spoon to remove the sticks from the skillet and place them on paper towels to drain excess oil.
Serving
  1. Garnish with fresh herbs if desired and serve immediately with your choice of dipping sauce.

Notes

For a healthier option, preheat the oven to 400 degrees F (200 degrees C), place sticks on a baking sheet, and bake for 20-25 minutes, flipping halfway through.
