Crispy Hot Honey Feta Chicken

Ingredients
  

For the Honey Sauce
  • 1/3 cup Honey
  • 1.5 tsp Hot Sauce
  • 3/4 tsp Chilli Flakes
For the Chicken
  • 2 Chicken Breasts Chicken Breasts Sliced in half horizontally
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Black Pepper
  • 35 g Plain Flour
  • 2 Eggs Eggs, beaten
  • 65 g Panko Breadcrumbs
  • as needed Veg Oil For frying
  • 200 g Feta Crumble for topping

Method
 

Preparation
  1. Combine honey, hot sauce, and chilli flakes in a bowl and warm in the microwave for 20 seconds. Leave to cool.
  2. Slice the chicken breasts in half horizontally to create 4 even-sized pieces.
  3. In a small bowl, mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
Coating the Chicken
  1. Set up 3 shallow dishes: one with flour and half the seasoning, another with beaten egg, and the third with panko and the remaining seasoning.
  2. Dredge chicken in flour, then coat in egg, and finally cover with breadcrumbs. Place on a tray.
Cooking
  1. Heat oil in a large pan over medium-high heat. Once hot, fry chicken for 3-4 minutes on each side until golden and cooked through. Transfer to a wire rack.
  2. Top each piece with crumbled feta and place under a grill until golden and soft.
  3. Drizzle hot honey over the chicken and serve.

Notes

Serve warm with a simple salad, steamed vegetables, or rice for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
