Preparation
- Combine honey, hot sauce, and chilli flakes in a bowl and warm in the microwave for 20 seconds. Leave to cool.
- Slice the chicken breasts in half horizontally to create 4 even-sized pieces.
- In a small bowl, mix paprika, salt, onion powder, garlic powder, oregano, cayenne, and black pepper.
Coating the Chicken
- Set up 3 shallow dishes: one with flour and half the seasoning, another with beaten egg, and the third with panko and the remaining seasoning.
- Dredge chicken in flour, then coat in egg, and finally cover with breadcrumbs. Place on a tray.
Cooking
- Heat oil in a large pan over medium-high heat. Once hot, fry chicken for 3-4 minutes on each side until golden and cooked through. Transfer to a wire rack.
- Top each piece with crumbled feta and place under a grill until golden and soft.
- Drizzle hot honey over the chicken and serve.
Notes
Serve warm with a simple salad, steamed vegetables, or rice for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
