For the Bang Bang Sauce

  • 1 tablespoon sriracha Adjust to taste based on your spice tolerance.
  • 1 teaspoon garlic powder Adds depth and warmth to the sauce.

Method
 

Preparation
  1. Mix together the mayonnaise, sweet chili sauce, sriracha, garlic powder, and a pinch of salt and pepper in a bowl until smooth. Set aside.
  2. Arrange three separate bowls: one for flour, one for beaten eggs, and one for breadcrumbs.
Breading the Salmon
  1. Dip each piece of salmon into the flour to coat, then immerse in the beaten eggs, and roll in the breadcrumbs until fully covered.
Frying
  1. Heat enough oil in a skillet over medium-high heat until shimmering.
  2. Carefully add the salmon bites in batches, frying for about 3–4 minutes on each side until golden brown and crispy.
  3. Transfer the bites to a paper towel-lined plate to soak up excess oil.
Serving
  1. Plate the crispy salmon bites, drizzle with the bang bang sauce or serve on the side for dipping, and garnish with chopped green onions.

Notes

Use the freshest salmon available and don’t rush the frying process for the best results. You can also bake these bites at 425°F (220°C) for 15-20 minutes for a healthier option.
