Ingredients

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup finely crushed club crackers (about 12 crackers)
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Pork Chops
  • 1 pound thin-cut boneless pork chops Use thin-cut for better cooking time.
Egg Wash
  • 2 large eggs
  • 1 tablespoon water
Cooking Essentials
  • Olive oil spray For ensuring crispiness.

Method
 

Preparation
  1. In a gallon-sized plastic bag, combine the flour, kosher salt, and black pepper. Shake the bag to mix.
  2. Add the pork chops to the bag and shake thoroughly to coat all surfaces with the flour mixture. Set aside.
  3. In a medium bowl, whisk together the eggs and water until homogeneous. Set aside.
  4. In another bowl, mix the finely crushed club crackers, grated Parmesan cheese, garlic powder, and onion powder until combined.
Cooking
  1. Preheat the air fryer to 400°F (204°C).
  2. Dip each pork chop in the egg mixture, letting excess drip off.
  3. Coat each pork chop with the cracker mixture, patting to ensure adhesion and shaking off excess.
  4. Spray the air fryer basket generously with olive oil spray.
  5. Place the coated pork chops in the basket without overlapping; cook in batches as needed.
  6. Spray the tops of the pork chops liberally with olive oil spray.
  7. Cook for 8 minutes, flipping halfway through and spraying tops again with olive oil spray.
  8. Ensure pork chops are golden brown and reach an internal temperature of at least 155°F (68°C).
Serving
  1. Garnish with chopped parsley if desired and serve immediately.

Notes

For optimal results, pat the pork chops dry before coating, use thin-cut chops, and avoid overcrowding the air fryer. Change the seasoning with herbs or spices for a twist or use panko breadcrumbs instead of club crackers.
