Preparation
- In a gallon-sized plastic bag, combine the flour, kosher salt, and black pepper. Shake the bag to mix.
- Add the pork chops to the bag and shake thoroughly to coat all surfaces with the flour mixture. Set aside.
- In a medium bowl, whisk together the eggs and water until homogeneous. Set aside.
- In another bowl, mix the finely crushed club crackers, grated Parmesan cheese, garlic powder, and onion powder until combined.
Cooking
- Preheat the air fryer to 400°F (204°C).
- Dip each pork chop in the egg mixture, letting excess drip off.
- Coat each pork chop with the cracker mixture, patting to ensure adhesion and shaking off excess.
- Spray the air fryer basket generously with olive oil spray.
- Place the coated pork chops in the basket without overlapping; cook in batches as needed.
- Spray the tops of the pork chops liberally with olive oil spray.
- Cook for 8 minutes, flipping halfway through and spraying tops again with olive oil spray.
- Ensure pork chops are golden brown and reach an internal temperature of at least 155°F (68°C).
Serving
- Garnish with chopped parsley if desired and serve immediately.
Notes
For optimal results, pat the pork chops dry before coating, use thin-cut chops, and avoid overcrowding the air fryer. Change the seasoning with herbs or spices for a twist or use panko breadcrumbs instead of club crackers.
