Ingredients
  

For the Coating
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup finely crushed club crackers (about 12 crackers)
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
For the Pork Chops
  • 1 pound thin-cut boneless pork chops
  • 2 large eggs
  • 1 tablespoon water

Method
 

Preparation
  1. In a gallon-sized plastic bag, combine the flour, kosher salt, and black pepper. Shake to mix.
  2. Add the pork chops to the bag and shake to coat. Set aside.
  3. In a medium bowl, whisk together eggs and water. Set aside.
  4. In another bowl, mix crushed crackers, Parmesan, garlic powder, and onion powder.
Cooking
  1. Preheat the air fryer to 400°F (204°C).
  2. Dip the pork chops in the egg mixture, then coat them in the cracker mixture, patting to ensure adhesion.
  3. Spray the air fryer basket with olive oil spray.
  4. Place the pork chops in the basket. Spray the tops with olive oil.
  5. Cook at 400°F for 8 minutes, flipping halfway and spraying again.
  6. Ensure the pork chops reach an internal temperature of at least 155°F (68°C).
  7. Garnish with parsley if desired and serve.

Notes

For extra crunch, use panko breadcrumbs instead of crushed crackers. Make sure to evenly coat the pork chops for a uniform crispy texture. Don't overcrowd the air fryer basket; cook in batches if necessary for the best results.
