- Grate the potatoes and onion using the large holes of a box grater.
- Place the grated potato and onion mixture in a clean kitchen towel or several layers of cheesecloth. Squeeze tightly over the sink to remove as much liquid as possible. This step is crucial for crispiness.
- Transfer the dried potato and onion mixture to a medium bowl.
- Add the egg, flour, salt, and pepper to the bowl. Mix until just combined. Do not overmix.
- Preheat your air fryer to 400°F (200°C).
- Lightly brush the air fryer basket with oil.
Cooking
- Form the potato mixture into small, flat patties, about 2 inches wide and 1/2 inch thick. You should get about 8 to 10 latkes.
- Carefully place the latkes in the air fryer basket in a single layer, ensuring they do not touch. Work in batches if necessary.
- Lightly brush the tops of the latkes with a little more oil.
- Air fry for 8 minutes. Flip the latkes carefully.
- Air fry for another 5 to 7 minutes, or until they are deep golden brown and very crispy.
- Serve immediately with your favorite toppings.
