Method
 

Preparation
  1. In a large bowl, whisk together the eggs, heavy cream, milk, 3/4 cup sugar, vanilla extract, and salt until beautifully combined.
  2. Arrange the brioche slices in a shallow dish and pour the creamy egg mixture over them. Ensure every slice is well-soaked and covered. Cover and refrigerate for at least 1 hour, or preferably overnight.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Remove the bread from the refrigerator and let it sit at room temperature for about 15 minutes.
  3. Place the soaked bread slices on a greased baking sheet. Bake for about 30 minutes, or until they’re golden and puffed up.
  4. Once baked, sprinkle the remaining 1/2 cup sugar evenly over the top of the bread slices.
  5. Caramelize the sugar using a kitchen torch or under the broiler until it’s golden and crisp.
Serving
  1. Serve warm with fresh berries on the side.

Notes

Choose quality brioche for best results. Maximize soaking time for custard texture. Experiment with sugar types for varied flavors.
