Method
 

Cooking Steps
  1. In a large skillet over medium heat, warm the olive oil.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet, seasoning with salt and pepper. Cook until they turn pink, about 3-4 minutes.
  4. Stir in the cherry tomatoes and spinach, cooking until the spinach wilts, around 2-3 minutes.
  5. Pour in the heavy cream, bringing the mixture to a simmer.
  6. Gradually stir in the grated Parmesan cheese until melted and incorporated.
  7. Serve over your cooked pasta, or enjoy it as is. Garnish with extra Parmesan or a sprinkle of red pepper flakes.

Notes

For the best results, don’t overcook the shrimp and use fresh ingredients. Make it ahead of time, and you can store the dish in an airtight container for up to three days.
