- Heat olive oil in a skillet over medium heat.
- Season chicken breasts with salt and pepper. Cook in the skillet for 6-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, sauté minced garlic for about one minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer, stirring to combine with the garlic.
- Add chopped spinach and sun-dried tomatoes to the sauce. Stir in grated parmesan cheese until well combined.
- Return the chicken to the skillet, coating it with the sauce. Let it simmer for one more minute.
- Serve the creamy chicken over pasta if desired.
Notes
Don’t rush the browning of the chicken for better flavor. Use fresh ingredients for the best taste. Adjust seasoning as you go. For serving over pasta, add reserved pasta water for better cohesion.
