  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable broth or chicken broth For a vegan option, use vegetable broth.
  • 1 cup Heavy cream or milk Can substitute with coconut milk for dairy-free option.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh basil, optional For garnish.
  • 4 slices Grilled cheese sandwich For serving.

Preparation
  1. In a pot, heat olive oil over medium heat.
  2. Add chopped onions and minced garlic, cooking until soft.
Cooking
  1. Pour in the canned tomatoes and broth, then simmer for about 20 minutes.
  2. Blend the soup until smooth, then stir in the cream.
  3. Season with salt and pepper.
  4. Serve hot with a gooey grilled cheese sandwich.

Notes

For a richer flavor, roast the canned tomatoes before adding them to the pot. Use fresh garlic and onions for the best taste. Adjust the thickness of the soup by adding more or less broth. If you want a little heat, add a pinch of red pepper flakes while cooking.
