Pasta
  • 12 oz Pasta (fettuccine or penne recommended) Any type will do!
Main ingredients
  • 4 cups Fresh Spinach Opt for vibrant, crisp bunches.
  • 1 cup Cream Use heavy cream for richness or substitute with half-and-half for a lighter option.
  • 3 cloves Garlic Mince finely for best flavor.
  • 2 tbsp Olive Oil Choose a good quality extra virgin.
  • 1 cup Parmesan Cheese Grate fresh for best taste.
  • to taste Salt & Pepper Essential for seasoning.

Method
 

Cooking
  1. Boil water in a pot with a pinch of salt and add your pasta. Cook until al dente, according to package instructions.
  2. In a large skillet, heat a drizzle of olive oil over medium heat.
  3. Add minced garlic to the hot oil and sauté until fragrant, about a minute or two.
  4. Add the fresh spinach and cook until wilted, about 2–3 minutes.
  5. Reduce the heat, pour in the cream, and stir to combine. Simmer to meld flavors.
  6. Add the cooked pasta to the skillet, tossing until coated in the sauce.
  7. Stir in freshly grated parmesan and season with salt and pepper to taste.
  8. Plate and serve immediately, adding extra parmesan on top if desired.

Notes

Use freshly grated cheese for optimum flavor. A splash of pasta water can help loosen the sauce if it thickens too much. Squeeze lemon juice for an added brightness.
