- Boil water in a pot with a pinch of salt and add your pasta. Cook until al dente, according to package instructions.
- In a large skillet, heat a drizzle of olive oil over medium heat.
- Add minced garlic to the hot oil and sauté until fragrant, about a minute or two.
- Add the fresh spinach and cook until wilted, about 2–3 minutes.
- Reduce the heat, pour in the cream, and stir to combine. Simmer to meld flavors.
- Add the cooked pasta to the skillet, tossing until coated in the sauce.
- Stir in freshly grated parmesan and season with salt and pepper to taste.
- Plate and serve immediately, adding extra parmesan on top if desired.
Notes
Use freshly grated cheese for optimum flavor. A splash of pasta water can help loosen the sauce if it thickens too much. Squeeze lemon juice for an added brightness.
