Preparation
- Preheat the oven to 400°F (200°C) for even cooking.
- Wash the sweet potatoes and poke holes in them with a fork. Place them on a baking sheet.
- Bake for 45-60 minutes until tender when pierced.
Cooking the Filling
- Heat olive oil in a skillet over medium heat for about 1-2 minutes.
- Add garlic and mushrooms, sautéing for about 5-7 minutes until softened.
- Stir in spinach and cook until wilted, around 2-3 minutes.
- Remove from heat and blend in cream cheese and Parmesan until creamy.
Assembling
- Once sweet potatoes are done, cut them open lengthwise and fluff the insides.
- Fill each sweet potato with the mushroom-spinach mixture.
- Season with salt and pepper, and garnish with fresh herbs if desired.
Serving
- Serve warm, ideally accompanied by a simple green salad or roasted vegetables.
Notes
Store leftovers in an airtight container for up to 4 days. Reheat in the oven for best results. For a vegan option, substitute with dairy-free cheese and cashew cream.
