Preparation
  1. Wash and peel the Yukon Gold potatoes under running water.
  2. Cut the potatoes into equal-sized 1-inch chunks.
Cooking
  1. Place the potatoes in a large pot and cover with water, about an inch above the potatoes.
  2. Add salt to taste and bring to a boil.
  3. Reduce heat and simmer until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot.
  5. Add butter, salt, pepper, and optional herbs, mixing until well combined.
  6. Mash to your desired texture, whether smooth or slightly chunky.
  7. Serve warm.

Choose the right potato: Yukon Golds are best for a creamy texture. Don’t overmix, and add warm ingredients to maintain ideal texture.
