  • 2 cups cooked chicken, shredded Use rotisserie chicken or leftovers for convenience.
  • 1 cup cream cheese, softened Ensure it's very soft to mix well.
  • 1 cup chicken broth Low sodium variety recommended.
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cream cheese and chicken broth until smooth.
  3. Stir in the shredded chicken, broccoli, cauliflower, garlic powder, onion powder, salt, and pepper.
Baking
  1. Transfer the mixture to a greased casserole dish and top with shredded cheddar cheese.
  2. Drizzle with olive oil.
  3. Bake for 25-30 minutes or until bubbly and golden on top.
  4. Let cool for a few minutes before serving.

Notes

This casserole can be enjoyed warm on its own or with a green salad. It makes for great leftovers and can be reheated easily. Store leftovers in the refrigerator for up to 3 days or freeze individual portions for up to 3 months.
