  • 1 cup cream cheese For a creamier texture.
  • 1 cup shredded cheese (like cheddar) Feel free to use different types of cheese.
  • 1/2 cup chicken broth Use low-sodium if preferred.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 2 tablespoons olive oil For sautéing the vegetables.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté the broccoli and cauliflower until tender, about 5-7 minutes.
  3. In a large bowl, combine the cooked chicken, sautéed vegetables, cream cheese, chicken broth, shredded cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
  6. Let it cool slightly before serving.

Notes

Serve warm with a green salad or roasted vegetables. For a heartier meal, serve with low-carb bread or cauliflower rice. Feel free to mix in other vegetables like bell peppers, zucchini, or spinach.
