  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 cup cauliflower florets Fresh or frozen, thawed and drained.
  • 1 cup broccoli florets Fresh or frozen, thawed and drained.
  • 1 cup cream cheese, softened Ensure it's softened for easy mixing.
  • 1 cup shredded cheddar cheese Divided into two portions for topping.
  • 1/2 cup chicken broth Use low-sodium for a healthier option.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, cauliflower, broccoli, cream cheese, half of the cheddar cheese, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Mix until everything is well coated.
  4. Transfer the mixture into a greased casserole dish.
  5. Top with the remaining cheddar cheese.
Cooking
  1. Bake for 25-30 minutes or until the casserole is bubbly and the cheese is melted.
  2. Garnish with fresh parsley before serving.

Notes

This casserole can be served as a main dish. Pair it with a simple green salad or steamed veggies for a complete meal. If you have leftovers, store the casserole in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave until hot.
