  • ½ tsp salt More to taste.
  • ¼ tsp black pepper
  • 1 tbsp olive oil Optional, for a silkier texture.
  • 1 tbsp white wine vinegar or apple cider vinegar
  • 1 cup fresh herbs (any combo) For a great mix, consider ½ cup parsley, ¼ cup chives, ¼ cup basil, tarragon, dill, or cilantro.
  • 1 optional anchovy or 1 tsp Dijon mustard For depth of flavor.

Combine Ingredients
  1. In a blender or food processor, combine Greek yogurt, lemon juice, garlic, fresh herbs, vinegar, olive oil, salt, and black pepper. Blend until completely smooth, achieving a vibrant green color.
Taste and Adjust
  1. Taste your dressing and adjust as needed. If you prefer a punchier flavor, add more salt or lemon juice. For a thinner texture, a splash of water or additional olive oil will work wonders.
Store or Serve
  1. Transfer the dressing to a jar or airtight container. Chill in the fridge for at least 30 minutes before serving to allow the flavors to meld together beautifully.

Notes

For better flavor, drizzling some olive oil on top or sprinkling fresh herbs enhances the presentation. This dressing stays fresh in the fridge for 4-5 days.
