Cooking the Pasta
- Cook the whole wheat pasta according to package instructions. Drain and set aside, reserving a bit of pasta water.
Sautéing the Chicken
- In a large skillet, heat olive oil over medium heat. Add the diced chicken breast, sprinkle with salt and black pepper, and cook until browned and cooked through, about 6-8 minutes.
Adding Garlic
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
Mixing in the Creaminess
- Lower the heat and stir in the Greek yogurt and grated Parmesan cheese, mixing until smooth and creamy.
Combining with Pasta
- Add the cooked pasta to the skillet and toss to coat. If thick, add a splash of reserved pasta water.
Tasting and Adjusting
- Taste and adjust the seasoning if necessary.
Serving Up
- Serve hot, garnished with fresh parsley if desired.
