  • 4 pieces bone-in, skin-on chicken thighs Use for the best flavor and moisture.
  • 2 tablespoons olive oil For searing the chicken.

  • 4 slices bacon, chopped Adds smokiness to the dish.
  • 1 cup mushrooms, sliced Choose any variety you like.
  • 2 cloves garlic, minced
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 teaspoon dried thyme

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat.
  4. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
  5. Flip the chicken and remove from the pan.
  6. In the same skillet, add the chopped bacon and cook until crispy.
  7. Stir in the mushrooms and garlic, cooking until soft.
  8. Pour in the heavy cream and add thyme, stirring to combine.
  9. Return the chicken to the skillet and spoon some of the sauce over the top.
  10. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
  11. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the oven or microwave until heated through. Don't skip the searing step as it adds flavor and color.
