Preparation
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes.
- Flip the chicken and remove from the pan.
- In the same skillet, add the chopped bacon and cook until crispy.
- Stir in the mushrooms and garlic, cooking until soft.
- Pour in the heavy cream and add thyme, stirring to combine.
- Return the chicken to the skillet and spoon some of the sauce over the top.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in the oven or microwave until heated through. Don't skip the searing step as it adds flavor and color.
