Ingredients
  

For the sandwiches
  • 48 pieces Ritz Crackers
  • 1 block cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup finely chopped chives
  • 1/4 cup finely chopped red bell pepper
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Method
 

Preparation
  1. In a medium bowl, combine the softened cream cheese, shredded cheddar, chives, red bell pepper, garlic powder, salt, and black pepper. Mix until well blended.
  2. Spread a teaspoon of the cheese mixture onto one Ritz Cracker, then top with a second cracker to form a sandwich.
  3. Repeat until all crackers and filling are used.
  4. Optionally, garnish with chopped chives and serve chilled or at room temperature.

Notes

Store any leftover sandwiches in an airtight container in the refrigerator for about 2-3 days for optimal freshness.
