Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy and pale (about 2-3 minutes).
  3. Add the eggs one at a time, blending well after each addition. Mix in the orange zest and vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, folding gently.
  5. Gently fold in the dried cranberries.
  6. Using a cookie scoop or spoon, drop dough balls onto the prepared baking sheet, leaving space between each.
  7. Bake for 10-12 minutes until the edges are lightly golden. Let the cookies cool on the sheet for a few minutes before transferring to a wire rack.
