Main Ingredients
  • 1 cup fresh cranberries, chopped Fresh is best; frozen works too.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, orange juice, orange zest, and vegetable oil until bright and bubbly.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Fold in cranberries.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, checking for doneness with a toothpick.
  7. Once cool, mix powdered sugar with orange juice and drizzle over the bread.

For variations, add nuts, spices, or chocolate chips as desired. Let the bread cool thoroughly before slicing for clean cuts.
