Preparation
  1. Heat olive oil in a skillet over medium-high heat. Brown the chuck roast cubes on all sides.
  2. Transfer the browned beef into your slow cooker.
  3. Add sliced carrots, diced potatoes, chopped onion, and minced garlic to the slow cooker.
  4. Pour the beef broth over the ingredients.
  5. Sprinkle thyme, rosemary, salt, and pepper. Stir to combine.
  6. Cover and cook on low for 8 hours or high for 4 hours until beef is tender.
  7. Ladle the stew into bowls and serve hot.

Notes

Don't skip browning the beef for flavor! Adjust seasoning at the end and use fresh herbs when possible. Consider adding vegetables like peas at the end of cooking for added flavor and texture.
