Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine pumpkin puree, flour, sugar, and baking powder. Stir gently until just combined.
  3. Grease your muffin tin with coconut oil, butter, or cooking spray.
  4. Spoon the batter into each muffin cup, filling them about two-thirds full.
  5. Bake in the preheated oven for 20-25 minutes. A toothpick inserted in the center should come out clean. Allow to cool before transferring them to a wire rack.

Notes

Use room temperature ingredients for smoother batter. Let the muffins cool completely for enhanced flavor and texture.
