- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine pumpkin puree, flour, sugar, and baking powder. Stir gently until just combined.
- Grease your muffin tin with coconut oil, butter, or cooking spray.
- Spoon the batter into each muffin cup, filling them about two-thirds full.
- Bake in the preheated oven for 20-25 minutes. A toothpick inserted in the center should come out clean. Allow to cool before transferring them to a wire rack.
