- In your trusty crockpot, toss in the corn, onion, garlic, broth, chili powder, cumin, salt, and pepper.
- Cook on low for 6-8 hours or on high for 4 hours.
- About 30 minutes before serving, stir in the heavy cream or coconut milk.
- Use an immersion blender to puree the soup to your desired consistency.
- Ladle the soup into bowls and serve hot, garnished with fresh cilantro and lime wedges.
Notes
Don't rush the cooking time; this soup gets better the longer it simmers! Taste as you go and adjust seasonings to your liking. For a chunkier soup, blend just half of it.
