  • 1 lb Italian sausage Can substitute with a vegetarian alternative.
  • 8 oz lasagna noodles Can use any short pasta like penne or fusilli.
  • 6 cups tomato broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can crushed tomatoes (14 oz)
  • 1 cup ricotta cheese Can substitute with goat cheese for variation.
  • 1 cup mozzarella cheese, shredded Reserve half for topping.
  • 1/2 cup Parmesan cheese, grated For topping.
  • to taste Salt and pepper
  • Fresh basil for garnish

Method
 

Cooking
  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add diced onion and minced garlic; cook until softened.
  3. Pour in the tomato broth and crushed tomatoes, and bring to a boil.
  4. Break the lasagna noodles into bite-sized pieces and add them to the pot.
  5. Cook according to package instructions until tender.
  6. Season with salt and pepper to taste.
  7. Stir in the ricotta cheese and half of the mozzarella cheese.
  8. Serve hot, topped with remaining mozzarella, Parmesan cheese, and fresh basil.

Notes

For extra flavor, consider adding Italian seasoning or red pepper flakes while cooking. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 3 months.
