Preparation of Meatloaf
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine ground beef, finely chopped onion, breadcrumbs, egg, BBQ sauce, chili powder, and salt and pepper. Mix until just combined.
- Press the meat mixture evenly into a greased 9x9-inch baking dish.
- Bake for 20-25 minutes until the internal temperature reaches 160°F (71°C). Drain any excess fat.
Preparation of Mashed Potatoes
- Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Mash until smooth.
- Add butter and milk, and mix until creamy. Season with salt and pepper.
Assembly and Final Baking
- Spread the mashed potatoes evenly over the meatloaf layer.
- Top with shredded cheese, bacon bits, and French-fried onions if desired.
- Return to the oven and bake for an additional 10-15 minutes or until cheese is melted and bubbly.
- Let the casserole rest for 5-10 minutes before serving.
