Mashed Potatoes
  • 2 lbs Russet or Yukon Gold potatoes High starch for creaminess.

  • optional Sour cream For extra creaminess.

Method
 

Preparation of Meatloaf
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, finely chopped onion, breadcrumbs, egg, BBQ sauce, chili powder, and salt and pepper. Mix until just combined.
  3. Press the meat mixture evenly into a greased 9x9-inch baking dish.
  4. Bake for 20-25 minutes until the internal temperature reaches 160°F (71°C). Drain any excess fat.
Preparation of Mashed Potatoes
  1. Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Mash until smooth.
  3. Add butter and milk, and mix until creamy. Season with salt and pepper.
Assembly and Final Baking
  1. Spread the mashed potatoes evenly over the meatloaf layer.
  2. Top with shredded cheese, bacon bits, and French-fried onions if desired.
  3. Return to the oven and bake for an additional 10-15 minutes or until cheese is melted and bubbly.
  4. Let the casserole rest for 5-10 minutes before serving.
