Method
 

Preparation
  1. Blend cottage cheese for a smoother texture.
  2. In a bowl or food processor, stir together cottage cheese, flour, baking powder, and salt until combined.
Shaping
  1. Divide the dough into 4 equal pieces.
  2. Shape each piece into a bagel by either rolling it into a rope and forming a circle or rolling it into a ball and poking a hole in the center.
Baking
  1. Place the shaped bagels on a parchment paper-lined baking sheet.
  2. Whisk the egg and brush it generously over each bagel.
  3. Sprinkle with your chosen toppings.
  4. Bake at 375°F (190°C) for 20-25 minutes or until golden brown.
Cooling and Storing
  1. Let the bagels cool for 5-10 minutes before slicing.
  2. Store them in a ziploc bag at room temperature or freeze for later.
