- Add the cottage cheese, peanut butter, sweetener, vanilla extract, and salt to a high-speed blender or food processor. Blend for 30 to 60 seconds until completely smooth and creamy.
- If the mousse is too thick, add 1 to 2 tablespoons of milk or heavy cream and blend again until your desired texture is reached.
- Transfer the mousse to a bowl and refrigerate for 15 to 20 minutes to help it firm up and allow the flavors to develop.
Melting Chocolate
- In a small bowl, melt the dark chocolate chips and coconut oil together in the microwave in 20-second bursts, stirring in between, until smooth.
Serving
- Divide the mousse into serving bowls or jars. Drizzle with the melted chocolate mixture and sprinkle with chopped peanuts. Serve immediately or store in the fridge until ready to enjoy.
