Preparation
- Preheat the oven to 350 degrees F and line a small sheet pan with parchment paper, spraying the sides with cooking spray.
- In a food processor, combine the cottage cheese and eggs, pulsing 6-7 times until just incorporated.
- Pour the mixture onto the prepared baking sheet and spread it evenly.
Baking
- Bake for 30 to 35 minutes until lightly golden brown.
- Let cool for 5 minutes before removing from the pan.
Serving
- Enjoy the flatbread as is, make a sandwich with mayo, provolone, deli meat, lettuce, and tomatoes, or create a pizza by spreading marinara, mozzarella, and pepperoni and baking for an additional 4-5 minutes until cheese melts.
Notes
Make sure to use whole milk cottage cheese for the best texture and flavor. For extra flavor, add herbs or spices to the mixture before baking. If using for sandwiches, slice the flatbread into desired size once cooled.
